- 2 cups dried white beans, soaked overnight
- 1 tablespoon olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 1/4 cup nutritional yeast
- Salt and pepper to taste
- Rinse and drain the soaked white beans.
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook for 5 minutes until softened.
- Add the white beans, vegetable broth, thyme, rosemary, and bay leaf. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour or until beans are tender.
- Stir in nutritional yeast. Season with salt and pepper.
- Remove the bay leaf before serving.
