Classic tomato soup with grilled cheese – the ultimate comfort food combo for easy lunches or cozy dinners.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 800g canned tomatoes
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 4 slices bread
  • 2 tbsp butter
  • 4 slices cheddar cheese

Instructions

  1. Heat olive oil in pot, sauté onion until soft
  2. Add tomatoes and broth, simmer 20 minutes
  3. Blend soup until smooth, season with salt/pepper
  4. Butter bread slices, assemble sandwiches with cheese
  5. Cook in skillet over medium heat until golden on both sides
  6. Serve hot soup with grilled cheese sandwiches
