- 2 cups (250 g) all-purpose flour
- 3/4 cup (150 g) sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup (120 ml) milk
- 1/2 cup (115 g) melted butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups blueberries
- Preheat oven to 180°C.
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, melted butter, eggs, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fold in blueberries gently.
- Divide batter into lined muffin tin.
- Bake for 18–22 minutes until golden and a toothpick comes out clean.
- Cool slightly before serving.
Notes
- For a keto version, replace flour with almond flour and sugar with a sugar substitute.
- For lower calories, reduce sugar by half or use applesauce instead of butter.
- Fresh or frozen blueberries work well.
