  • 2 chicken breasts
  • 6 cups (1.5 L) chicken broth
  • 1 cup carrots, sliced
  • 1/2 cup celery, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup egg noodles

Instructions

  1. Place chicken breasts, broth, carrots, celery, onion, garlic, salt, pepper, thyme, and bay leaf into a slow cooker.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  3. Remove chicken, shred with forks, and return to the slow cooker.
  4. Add egg noodles and cook on high for 20–30 minutes until noodles are tender.
  5. Remove bay leaf before serving and adjust seasoning if needed.
  6. Serve hot.

Notes

  • For a keto version, omit egg noodles and add more low-carb vegetables like zucchini.
  • For a low-calorie version, reduce salt and use skinless chicken breasts.
  • Store leftovers in the fridge for up to 3 days.
