  • 2 cups butternut squash, cubed
  • 2 apples, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss squash and apples with olive oil, salt, pepper, thyme, and garlic powder.
  3. Spread squash and apples on a sheet pan.
  4. Place chicken fillets on top.
  5. Season chicken with salt and pepper.
  6. Bake for 25-30 minutes until chicken reaches 165°F (74°C).
  7. Serve warm.
