  • 1 onion, quartered
  • 4 garlic cloves
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat oven to 200°C.
  2. Toss tomatoes, onion, and garlic with olive oil, salt, and pepper.
  3. Roast for 30–35 minutes.
  4. Transfer to a pot with broth and simmer for 10 minutes.
  5. Blend until smooth.
  6. Stir in basil and serve warm.
