Ingredients

  • 1 can (400 g) beans, drained
  • 1 cup carrots, diced
  • 1 cup zucchini, diced
  • 1/2 cup celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion and garlic until fragrant.
  2. Add carrots, zucchini, and celery, cooking for 5 minutes.
  3. Pour in vegetable broth, diced tomatoes, beans, and Italian seasoning.
  4. Bring to a boil, then add pasta and cook until tender.
  5. Season with salt and pepper.
  6. Serve hot.

Notes

  • For a keto version, replace pasta with cauliflower rice.
  • To reduce calories, use fewer beans and more vegetables.
