- 1 cup lentils, rinsed
- 6 cups vegetable broth
- 1 cup carrots, diced
- 1 cup tomatoes, chopped
- 1/2 cup celery, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Heat a pot over medium heat.
- Sauté onion and garlic until fragrant.
- Add carrots and celery, cook for 3 minutes.
- Stir in lentils, tomatoes, broth, and cumin.
