A hearty and nutritious lentil vegetable soup packed with protein and flavor.

Ingredients

  • 1 cup lentils, rinsed
  • 6 cups vegetable broth
  • 1 cup carrots, diced
  • 1 cup tomatoes, chopped
  • 1/2 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat a pot over medium heat.
  2. Sauté onion and garlic until fragrant.
  3. Add carrots and celery, cook for 3 minutes.
  4. Stir in lentils, tomatoes, broth, and cumin.
  5. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
  6. Season with salt and pepper.
  7. Serve hot.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For a thicker soup, blend half of it before serving.
  • Add spinach or kale for extra greens.
