1 lb chicken breast, diced
4 cups chicken broth (low sodium)
1 lemon (juiced and zested)
2 cloves garlic, minced
1 onion, diced
2 carrots, sliced
2 celery stalks, chopped
1 tsp thyme
1 tsp black pepper
Salt to taste
Fresh parsley for garnish
Instructions
Melt butter in a pot over medium heat.
Add diced chicken and cook until browned (5-7 minutes).
Stir in garlic, onion, carrots, and celery. Cook for 3 minutes.
Pour in chicken broth and bring to a boil.
