Healthy bran muffins packed with fiber and whole grains, perfect for a quick breakfast or snack.

Ingredients

  • 1 1/2 cups (180 g) bran cereal
  • 1 cup (240 ml) milk
  • 1 cup (125 g) flour
  • 1/2 cup (100 g) brown sugar
  • 1 egg
  • 1/4 cup (60 ml) oil
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 180°C.
  2. Soak bran cereal in milk for 5 minutes.
  3. Add egg, oil, and brown sugar and mix well.
  4. Stir in flour, baking soda, and salt.
  5. Spoon batter into muffin cups.
  6. Bake for 18–20 minutes until set.
  7. Cool before serving.

Notes

  • Store in an airtight container for up to 3 days.
  • For a keto version, replace flour with almond flour and sugar with a keto-friendly sweetener.
  • For lower calories, reduce sugar or use applesauce instead of oil.
