  • 1 cup chopped zucchini
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped asparagus
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C)
  2. Mix all chopped vegetables in a large bowl
  3. Add olive oil, salt, and pepper. Toss to coat
  4. Transfer to a baking dish. Bake for 25 minutes
  5. Sprinkle cheese on top (if using) and bake 5 more minutes
  6. Serve hot
