- 1 cup cooked quinoa
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 1/2 cup sliced red onion
- 1/2 cup sliced olives
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped parsley
- Dressing:
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
