Ingredients

  • 1 cup cooked quinoa
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/2 cup sliced red onion
  • 1/2 cup sliced olives
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped parsley
  • Dressing:
    • 1/4 cup olive oil
    • 2 tablespoons lemon juice
    • 1 teaspoon dried oregano
    • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, olives, feta cheese, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Chill in the refrigerator for 30 minutes before serving.

Notes

  • For a keto version, reduce the quinoa and add more olives and feta.
  • For a low-calorie version, use less feta and olive oil.
  • Store leftovers in an airtight container for up to 3 days.
