Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup parsley, chopped
  • Dressing:
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cook pasta until al dente, drain and rinse under cold water.
  2. In a large bowl, combine pasta, tomatoes, cucumber, onion, olives, feta, and parsley.
  3. Whisk dressing ingredients together.
  4. Pour dressing over salad and toss gently.
  5. Refrigerate for at least 1 hour before serving.
