  • 1 cup tomatoes, diced
  • 1 cup cucumber, diced
  • 1/2 cup red onion, sliced
  • 1/2 cup olives
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
