3 pounds sirloin steak, cut into bite-sized pieces
2 teaspoons kosher salt
1 teaspoon black pepper
1 Tablespoon vegetable oil (add more if needed)
1 small sweet onion, thinly sliced
3 cloves garlic, thinly sliced
1 cup unsalted beef stock
1 ounce packet au jus gravy mix
4 tablespoons unsalted butter, thinly sliced
1. Season steak with salt and pepper and toss in a bowl.
2. Heat a skillet with oil and sear steak in batches until browned but not cooked through.
3. Add seared steak to a 6-quart slow cooker with onion and garlic.
4. Pour in beef stock, sprinkle au jus mix, and top with butter.
5. Cook on high for 3–4 hours or low for 6–8 hours. Stir occasionally.
6. Serve hot with mashed potatoes, noodles, or rice.
Great for meal prep. Leftovers reheat well. Add extra garlic for a punchier flavor.
