  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups cooked white beans
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 2 slices turkey bacon, cooked and crumbled

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add white beans, vegetable broth, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Blend half the soup until smooth, then return to the pot.
  7. Stir in heavy cream and season with salt and pepper.
  8. Garnish with crumbled turkey bacon before serving.
