  • 2 cups dried white beans, soaked overnight
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic, thyme, rosemary, and bay leaf. Cook for 1 minute.
  4. Add soaked white beans and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 45 minutes or until beans are tender.
  6. Season with salt and pepper.
  7. Remove bay leaf and stir in fresh parsley and basil before serving.
