A creamy and comforting tomato basil soup recipe that’s perfect for any occasion.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 800 g canned tomatoes
  • 2 cups broth
  • 1 cup fresh basil leaves
  • 1/2 cup heavy cream (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Stir in canned tomatoes and broth.
  5. Simmer for 20 minutes.
  6. Add basil leaves and blend until smooth.
  7. Stir in heavy cream if using, season with salt and pepper.
  8. Serve hot.

  • For a vegan version, omit the cream or use coconut milk.
