Ingredients

  • 6 cups vegetable broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1/2 cup celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans
  • 1 can (400 g) diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Heat a pot over medium heat.
  2. Sauté onion and garlic until fragrant.
  3. Add carrots, potatoes, celery, and green beans. Cook for 5 minutes.
  4. Pour in vegetable broth and diced tomatoes.
  5. Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
  6. Season with salt and pepper.
  7. Serve hot.

Notes

  • For a keto version, replace potatoes with cauliflower.
  • For a low-calorie option, reduce oil and salt.
