A simple and comforting classic tomato soup made from scratch with fresh ingredients.

Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 800 g canned whole tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion until soft, then add garlic and cook for 1 minute.
  3. Add tomatoes, broth, sugar, salt, and pepper.
  4. Simmer for 20 minutes.
  5. Blend until smooth using an immersion blender.
  6. Stir in cream if using.
  7. Heat through and serve warm.

Notes

  • For a keto version, omit sugar and use full-fat cream.
  • For a low-calorie version, skip the cream.
