  • 1 whole chicken (34 lbs), cut into pieces
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 8 cups water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Place chicken pieces in a large pot. Add water and bring to a boil.
  2. Skim off any foam from the surface.
  3. Add carrots, celery, onion, garlic, salt, pepper, and bay leaves.
  4. Reduce heat and simmer for 1 hour.
  5. Remove chicken, shred the meat, and return to the pot.
  6. Discard bay leaves. Stir in parsley before serving.
