- 2 cups dried white beans, soaked overnight
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 slices turkey bacon, chopped (optional)
- Drain and rinse the soaked white beans.
- Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until soft.
- Add turkey bacon if using, cook for 2 minutes.
- Stir in white beans, vegetable broth, sun-dried tomatoes, thyme, and rosemary.
