A hearty and flavorful white bean soup with sun-dried tomatoes, perfect for a healthy meal.

  • 2 cups dried white beans, soaked overnight
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 slices turkey bacon, chopped (optional)

Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until soft.
  3. Add turkey bacon if using, cook for 2 minutes.
  4. Stir in white beans, vegetable broth, sun-dried tomatoes, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes or until beans are tender.
  6. Season with salt and pepper. Serve hot.
