A hearty white bean soup with rich slow-cooked flavor, perfect for a comforting meal. Made with turkey bacon for a lighter twist.

  • 2 cups dried white beans, soaked overnight
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a large pot over medium heat. Add turkey bacon and cook until crispy.
  3. Add onion, carrots, and celery. Cook until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Add beans, broth, bay leaf, and thyme. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beans are tender.
  7. Season with salt and pepper. Remove bay leaf before serving.

  • Soaking beans overnight reduces cooking time.
