A hearty and flavorful white bean soup with a zesty lemon pepper twist.

Ingredients

  • 2 cups white beans, soaked overnight
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 bay leaves
  • 4 slices turkey bacon, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook until softened.
  3. Add turkey bacon and cook for 2 minutes.
  4. Stir in white beans, vegetable broth, bay leaves, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Remove bay leaves and stir in lemon zest and juice.
  7. Serve hot.

Notes

  • Soak beans overnight for best results.
  • Adjust lemon and pepper to taste.
  • Store leftovers in the fridge for up to 3 days.
