- 2 cups white beans, soaked overnight
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 tsp black pepper
- 1 tsp salt
- 2 bay leaves
- 4 slices turkey bacon, chopped
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook until softened.
- Add turkey bacon and cook for 2 minutes.
- Stir in white beans, vegetable broth, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove bay leaves and stir in lemon zest and juice.
- Serve hot.
Notes
- Soak beans overnight for best results.
