- 2 cups white beans, soaked overnight
- 4 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 slices turkey bacon, chopped
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 4 slices crusty bread
- 2 tbsp olive oil
- Drain the soaked white beans and rinse them.
- In a large pot, heat 1 tbsp olive oil over medium heat.
- Add the turkey bacon and cook until crispy. Remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery until softened.
- Add the white beans, vegetable broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until beans are tender.
- While the soup cooks, brush bread slices with olive oil and toast until crispy.
- Serve the soup topped with crispy bread and turkey bacon.
