Ingredients

  • 2 cups dried white beans, soaked overnight
  • 6 cloves garlic, thinly sliced
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1 tbsp fresh thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and cook until caramelized, about 3 minutes.
  3. Add onion, carrots, and celery. Cook until softened, 5 minutes.
  4. Drain soaked beans and add to the pot.
  5. Pour in vegetable broth and add bay leaf, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  7. Remove bay leaf before serving.

Notes

  • Soak beans overnight for best texture.
