- 2 cups dried white beans, soaked overnight
- 6 cloves garlic, thinly sliced
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 1 tbsp fresh thyme
- Heat olive oil in a large pot over medium heat.
- Add garlic and cook until caramelized, about 3 minutes.
- Add onion, carrots, and celery. Cook until softened, 5 minutes.
- Drain soaked beans and add to the pot.
- Pour in vegetable broth and add bay leaf, thyme, salt, and pepper.

- Remove bay leaf before serving.
