  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 sprigs fresh rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 bay leaves

Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion and garlic, sauté until translucent.
  4. Add carrot and celery, cook for 5 minutes.
  5. Stir in the white beans, vegetable broth, rosemary, salt, pepper, and bay leaves.
  6. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  7. Remove rosemary sprigs and bay leaves before serving.
