A creamy and comforting soup made with parmesan and beans, perfect for cold days.

Ingredients

  • 2 cups white beans, cooked
  • 1 cup grated parmesan cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and minced garlic. Cook until soft.
  3. Add white beans, vegetable broth, salt, pepper, and thyme. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in heavy cream and parmesan cheese until melted.
  6. Blend until smooth using an immersion blender.
  7. Serve hot with extra parmesan on top.

Notes

  • For a thicker soup, add more beans.
  • For a lighter version, replace heavy cream with half-and-half.
