- 2 cups white beans, cooked
- 1 cup grated parmesan cheese
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- Heat olive oil in a pot over medium heat.
- Add diced onion and minced garlic. Cook until soft.
- Add white beans, vegetable broth, salt, pepper, and thyme. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in heavy cream and parmesan cheese until melted.
- Blend until smooth using an immersion blender.
