  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse and soak the beans overnight, then drain.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, carrots, and celery. Cook for 5 minutes.
  4. Stir in garlic and cook for 1 minute.
  5. Add beans, vegetable broth, tomatoes, and spices.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes or until beans are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot.
