A hearty and comforting Traditional Irish Beef Stew made with tender beef, root vegetables, and rich broth. Perfect for cold days.

Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 cups beef broth
  • 3 carrots, chopped
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Add onions and garlic, sauté until soft.
  4. Stir in tomato paste, thyme, salt, and pepper.
  5. Pour in beef broth and bring to a simmer.
  6. Add carrots and potatoes.
  7. Cover and cook on low heat for 2 hours.
  8. Serve hot.

Notes

  • For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew.
  • Store leftovers in the fridge for up to 3 days.
