2 chicken breasts, diced
1 cup white rice
4 cups chicken broth
1 cup heavy cream
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 tsp thyme
1 tsp salt
1/2 tsp black pepper
2 tbsp butter
Instructions
Melt butter in a large pot over medium heat.
Add onions, carrots, celery and garlic. Cook for 5 minutes.
Add chicken and cook until no longer pink.
Pour in chicken broth and bring to a boil.
Add rice and simmer for 15 minutes.
Stir in heavy cream and seasonings.
Cook for 5 more minutes.
Serve hot.
