1 lb chicken breast, sliced
1 can (14 oz) coconut milk
2 cups chicken broth
1 tbsp ginger, minced
2 cloves garlic, minced
1 tbsp red curry paste
1 tbsp fish sauce
1 tbsp lime juice
1 cup mushrooms, sliced
1 red bell pepper, sliced
1/4 cup fresh cilantro, chopped
1/4 cup green onions, sliced
Instructions
Heat a pot over medium heat and add coconut milk, chicken broth, ginger, garlic, and red curry paste. Stir well.
Add sliced chicken and simmer for 10 minutes.
Add mushrooms and red bell pepper. Cook for another 5 minutes.
Stir in fish sauce and lime juice.
Garnish with cilantro and green onions before serving.
Notes
Adjust spice level by adding more or less red curry paste.
For a keto version, skip the bell pepper and add extra mushrooms.
Use low-sodium chicken broth for a healthier option.
