A flavorful Thai peanut chicken soup packed with protein and rich flavors. This soup combines tender chicken, creamy peanut butter, and aromatic spices for a comforting meal.

Ingredients

  • 1 lb boneless chicken breast, cubed
  • 4 cups chicken broth
  • 1/2 cup creamy peanut butter
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tbsp lime juice
  • 1/2 cup coconut milk
  • 1/4 cup cilantro, chopped
  • 1/2 tsp red pepper flakes
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Stir in ginger and garlic, cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and stir in peanut butter until smooth.
  6. Add soy sauce, fish sauce, and lime juice.
  7. Simmer for 15 minutes.
  8. Stir in coconut milk and red pepper flakes.
  9. Garnish with cilantro before serving.

  • Use natural peanut butter for best results.
  • Adjust spice level with more or less red pepper flakes.
