  • 1 lb boneless chicken breast, sliced
  • 1 tbsp coconut oil
  • 4 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp ginger, grated
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 tsp turmeric
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a pot over medium heat
  2. Add chicken and cook for 5 minutes until no longer pink
  3. Stir in garlic, ginger, and turmeric for 1 minute
  4. Pour in broth and bring to a simmer
  5. Add mushrooms and bell pepper, cook for 10 minutes
  6. Stir in coconut milk, lime juice, and fish sauce
  7. Simmer for 5 more minutes
  8. Garnish with cilantro before serving
