- 1 block (14 oz) firm tofu, pressed and cubed
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 tbsp soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1 tbsp cornstarch mixed with 2 tbsp water
- 1 tbsp sesame seeds (optional)
- Heat oil in a large pan over medium-high heat.
- Add tofu cubes and cook until golden brown on all sides. Remove and set aside.
- In the same pan, add bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes.
- In a small bowl, mix soy sauce, honey, rice vinegar, ginger, and garlic.
- Pour the sauce over the vegetables and stir well.
- Add the cooked tofu back to the pan.
- Stir in the cornstarch mixture and cook until the sauce thickens.
- Sprinkle sesame seeds on top before serving.
Notes
- Use extra-firm tofu for better texture.
- For a keto version, replace honey with a sugar-free sweetener.
- Low-calorie option: reduce oil to 1 tbsp and skip sesame seeds.
