A quick and flavorful Teriyaki Tofu Stir Fry packed with protein and vegetables. Perfect for a healthy meal.

Ingredients

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 tbsp soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Heat oil in a large pan over medium-high heat.
  2. Add tofu cubes and cook until golden brown on all sides. Remove and set aside.
  3. In the same pan, add bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes.
  4. In a small bowl, mix soy sauce, honey, rice vinegar, ginger, and garlic.
  5. Pour the sauce over the vegetables and stir well.
  6. Add the cooked tofu back to the pan.
  7. Stir in the cornstarch mixture and cook until the sauce thickens.
  8. Sprinkle sesame seeds on top before serving.

Notes

  • Use extra-firm tofu for better texture.
  • For a keto version, replace honey with a sugar-free sweetener.
  • Low-calorie option: reduce oil to 1 tbsp and skip sesame seeds.
