- 1 cup mashed sweet potato
- 1/4 cup sugar
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder

- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup milk
- 1/2 cup sugar (for coating)
- 1 tbsp cinnamon (for coating)
- Oil for frying
Instructions
- Mix mashed sweet potato, sugar, egg, melted butter, and vanilla in a bowl.
- In a separate bowl, combine flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually add dry ingredients to sweet potato mixture, alternating with milk.
- Heat oil in a deep pan to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil and fry until golden brown.
- Drain donuts on paper towels.
- Mix sugar and cinnamon in a bowl.
- Roll warm donuts in cinnamon sugar to coat.
- Serve immediately.
Notes
- Use cooled mashed sweet potato for best texture.
- Adjust oil temperature to prevent burning.
- Store leftovers in an airtight container for up to 2 days.
