Ingredients

6 cups baby spinach (180 grams)
1 1/2 cups strawberries, sliced (225 grams)
1/2 cup crumbled feta cheese (75 grams)
1/2 cup pecans, toasted (60 grams)
1/4 cup thinly sliced red onion
Dressing:
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon maple syrup
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions
Toast pecans in a dry skillet over medium heat for 4 to 5 minutes until fragrant, then let them cool.
In a large bowl, combine spinach, strawberries, feta, pecans, and red onion.
In a small bowl, whisk together olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper until smooth.
Pour dressing over the salad and toss gently to combine.
Serve immediately for the best texture.
Notes
For a keto version, replace maple syrup with a sugar-free sweetener.
For a low-calorie option, reduce the amount of feta and pecans.
Store leftovers without dressing to keep spinach crisp.
