- 6 cups fresh baby spinach (about 180 grams)
- 1 1/2 cups fresh strawberries, sliced (225 grams)
- 1/4 cup thinly sliced red onion
- 1/3 cup sliced almonds, toasted
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 cup extra virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Wash spinach thoroughly and dry completely using a salad spinner.
- Hull strawberries and slice evenly.
- In a large mixing bowl, combine spinach, strawberries, red onion, and toasted almonds.
- In a separate bowl, whisk balsamic vinegar, honey, and Dijon mustard until fully blended.
- Slowly stream in olive oil while whisking constantly to emulsify the dressing.
- Add salt and pepper and whisk again.
