  • 2 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 2 pie crusts (9-inch)
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix strawberries, rhubarb, sugar, cornstarch, lemon juice, and cinnamon in a bowl.
  3. Line pie dish with one crust.
  4. Pour filling into crust.
  5. Cover with second crust, seal edges, and cut slits in top.
  6. Brush with egg wash.
