- 1 1/2 cups (180 g) graham cracker crumbs
- 1/4 cup (50 g) sugar
- 1/2 cup (115 g) melted butter
- Filling:
- 900 g cream cheese, softened
- 1 cup (200 g) sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup (240 ml) sour cream
- Topping:
- 2 cups fresh strawberries, sliced
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- Preheat oven to 160°C.
- Mix crust ingredients and press into a springform pan.
- Bake crust for 10 minutes and let cool.
- Beat cream cheese until smooth.
- Add sugar and vanilla, mixing well.
- Add eggs one at a time, mixing after each addition.
- Stir in sour cream until smooth.
- Pour filling over crust.
