- 6 cups vegetable broth
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme

- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic, thyme, and black pepper. Stir for 1 minute.
- Pour in vegetable broth and add split peas and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until peas are tender.
- Remove bay leaf and blend soup if desired for a smoother texture.
- Serve hot with crusty bread.

- Soaking peas overnight reduces cooking time.
