Description

A moist and flavorful bread combining sweet pears with warm ginger and spices.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 eggs
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 1 cup grated pear
  • 1/4 cup chopped crystallized ginger

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Whisk flour, baking soda, ginger, cinnamon, nutmeg, and salt in a bowl.
  3. Cream butter and brown sugar until light. Beat in eggs one at a time.
  4. Stir in molasses and vanilla. Fold in grated pear and crystallized ginger.
  5. Add dry ingredients to wet mixture, mixing until just combined.
  6. Pour batter into prepared pan. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack.
