Ingredients
Speculoos Crust
48 Speculoos Cookies
½ cup unsalted butter, melted
⅛ tsp kosher salt (optional)
Cheesecake Filling
24 oz cream cheese, room temperature
¾ cup granulated sugar
1 cup Speculoos cookie butter
½ cup sour cream
1 tsp vanilla extract
3 large eggs, room temperature
Speculoos Topping
1 cup Speculoos cookie butter, melted
1 cup crumbled Speculoos cookies (about 12 cookies)
Instructions
- Preheat oven to 350°F and line a 9×13 baking pan with parchment paper, leaving overhang on the sides.
- Pulse Speculoos cookies into fine crumbs. Combine with melted butter and optional salt in a bowl.
- Press mixture firmly into the pan to form a crust. Bake for 10 minutes. Set aside.
- Beat cream cheese and sugar until smooth and lump-free.
- Add cookie butter, sour cream, and vanilla. Beat until fully combined.
- Add eggs one at a time, mixing gently after each until just incorporated. Do not overmix.
- Pour filling over crust and spread evenly. Bake for 35 minutes until the center is just set.
- Cool for 1 hour at room temp, then refrigerate for at least 4 hours.
- Microwave cookie butter topping until smooth (30–45 seconds). Spread evenly over chilled cheesecake.
- Chill again for 30 minutes until topping sets. Top with crumbled cookies before serving. Slice and enjoy!
Notes
For clean cuts, use a warm knife and wipe between slices.
Don’t add cookie crumbs until ready to serve to keep them crisp.
Serve chilled or at room temperature depending on preference.
