Speculoos Crust

48 Speculoos Cookies

½ cup unsalted butter, melted

⅛ tsp kosher salt (optional)

Cheesecake Filling

24 oz cream cheese, room temperature

¾ cup granulated sugar

1 cup Speculoos cookie butter

½ cup sour cream

1 tsp vanilla extract

3 large eggs, room temperature

Speculoos Topping

1 cup Speculoos cookie butter, melted

1 cup crumbled Speculoos cookies (about 12 cookies)


Instructions

  1. Preheat oven to 350°F and line a 9×13 baking pan with parchment paper, leaving overhang on the sides.
  2. Pulse Speculoos cookies into fine crumbs. Combine with melted butter and optional salt in a bowl.
  3. Press mixture firmly into the pan to form a crust. Bake for 10 minutes. Set aside.
  4. Beat cream cheese and sugar until smooth and lump-free.
  5. Add cookie butter, sour cream, and vanilla. Beat until fully combined.
  6. Add eggs one at a time, mixing gently after each until just incorporated. Do not overmix.
  7. Pour filling over crust and spread evenly. Bake for 35 minutes until the center is just set.
  8. Cool for 1 hour at room temp, then refrigerate for at least 4 hours.
  9. Microwave cookie butter topping until smooth (30–45 seconds). Spread evenly over chilled cheesecake.
  10. Chill again for 30 minutes until topping sets. Top with crumbled cookies before serving. Slice and enjoy!

Notes

For clean cuts, use a warm knife and wipe between slices.

Don’t add cookie crumbs until ready to serve to keep them crisp.
