  • 2 lbs chicken thighs, boneless and skinless
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 potatoes, diced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken thighs and cook until browned, about 5 minutes per side. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery for 5 minutes.
  4. Add garlic and cook for 1 minute.
  5. Pour in chicken broth and add thyme, paprika, salt, and pepper. Bring to a boil.
  6. Return chicken to the pot. Reduce heat and simmer for 20 minutes.
  7. Add potatoes and peas. Cook for another 10 minutes or until potatoes are tender.
  8. Shred chicken before serving.

Notes

  • For a keto version, replace potatoes with cauliflower.
  • For a low-calorie version, skip the potatoes and add more vegetables.
  • Store leftovers in the fridge for up to 3 days.
