Smoky Vegetarian Bean Soup

A hearty and flavorful vegetarian bean soup with a smoky twist.

Ingredients

  • 2 cups dried black beans
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 strips turkey bacon, chopped (optional)

Instructions

  1. Soak the black beans overnight or for at least 6 hours.
  2. Drain and rinse the beans.
  3. Heat olive oil in a large pot over medium heat.
  4. Add onion, garlic, carrot, and celery. Cook until softened.
  5. Add turkey bacon if using and cook for 2 minutes.
  6. Add beans, vegetable broth, diced tomatoes, smoked paprika, cumin, and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  8. Season with salt and pepper to taste.
  9. Remove bay leaf before serving.

Notes

  • For a creamier texture, blend half the soup before serving.
  • Serve with crusty bread or rice.
  • Store leftovers in the fridge for up to 3 days.
