- 2 cups dried black beans
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 strips turkey bacon, chopped (optional)
- Soak the black beans overnight or for at least 6 hours.
- Drain and rinse the beans.
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrot, and celery. Cook until softened.
- Add turkey bacon if using and cook for 2 minutes.
- Add beans, vegetable broth, diced tomatoes, smoked paprika, cumin, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
- Season with salt and pepper to taste.
- Remove bay leaf before serving.
Notes
- For a creamier texture, blend half the soup before serving.
- Serve with crusty bread or rice.
- Store leftovers in the fridge for up to 3 days.
