- 2 tbsp olive oil
- 1 lb chicken breast, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- 1/2 cup heavy cream (optional)
- Fresh cilantro for garnish
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, sauté onion, garlic, and bell pepper until soft, about 5 minutes.
- Add corn, black beans, diced tomatoes, chicken broth, smoked paprika, cumin, and chili powder. Stir well.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Return chicken to the pot and simmer for another 5 minutes.
- Stir in heavy cream if using. Season with salt and pepper.
- Garnish with fresh cilantro before serving.
Notes
- For a keto version, skip the corn and use full-fat coconut milk instead of heavy cream.
- For a low-calorie version, omit the cream and use extra chicken broth.
- Store leftovers in an airtight container for up to 3 days.
