These crispy smash burger tacos are a fusion dream—griddled beef smashed into tortillas, melty cheese, and tangy sauce all in one unforgettable bite.
1 pound ground beef (80/20 fat percentage)
1 teaspoon kosher salt
10 cracks fresh black pepper
6 (six-inch) flour tortillas
6 slices muenster or provolone cheese
Shredded lettuce
Chopped white onion
Dill pickle chips
Burger Sauce:
1/2 cup mayonnaise
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon mustard
2 tablespoons minced bread & butter pickles
1 tablespoon pickle brine
10 cracks fresh black pepper
1/4 teaspoon Worcestershire sauce
1. Add all burger sauce ingredients to a bowl and whisk to combine. Refrigerate.
2. Season beef with salt and pepper. Divide into 2.5 oz balls.
3. Preheat griddle until very hot, no oil.
4. Place beef balls on griddle, top each with a tortilla, and smash hard.
5. Cook for 2–3 minutes until crispy. Press again.
6. Flip to tortilla side, cook 2 more minutes, add cheese on top.
7. Serve with burger sauce and toppings.
Don’t use oil; beef fat renders out naturally.
Press firmly for best crust.
