A creamy and comforting slow cooker cream of chicken soup that’s easy to prepare and perfect for cold days or boosting immunity.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp butter
  • 2 tbsp all-purpose flour (or almond flour for keto)

Instructions

  1. Place chicken, broth, carrots, celery, onion, garlic, thyme, salt, and pepper in the slow cooker.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. Remove chicken, shred it, and return to the slow cooker.
  4. In a small saucepan, melt butter, whisk in flour, and cook for 1 minute.
  5. Slowly stir in 1 cup of broth from the slow cooker to make a roux.
  6. Pour the roux and heavy cream into the slow cooker, stir well.
  7. Cook for another 30 minutes until thickened.
  8. Serve warm.

Notes

  • For a keto version, replace flour with almond flour.
  • Use coconut milk instead of heavy cream for a dairy-free option.
  • Add spinach or kale for extra nutrients.
