Ingredients

  • 3 cups corn kernels (fresh or frozen)
  • 1 diced onion
  • 2 minced garlic cloves
  • 2 diced carrots
  • 2 diced celery stalks
  • 4 cups chicken broth
  • 1 cup milk
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Place chicken breasts in the slow cooker
  2. Add corn, onion, garlic, carrots, and celery
  3. Pour in chicken broth
  4. Cook on low for 6 hours
  5. Shred chicken with forks
  6. Stir in milk and seasonings
  7. Cook for another 30 minutes
