- 2 cans white beans, drained and rinsed
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
- Optional: 4 slices turkey bacon, chopped
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
- If using turkey bacon, add it now and cook for 2 minutes.
- Add white beans, vegetable broth, thyme, and bay leaf. Stir well.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove bay leaf. Season with salt and pepper.
- Serve hot.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Freeze for longer storage.
- Add a splash of lemon juice for extra flavor.
