A hearty and simple white bean soup made with pantry staples.

Ingredients

  • 2 cans white beans, drained and rinsed
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional: 4 slices turkey bacon, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
  3. If using turkey bacon, add it now and cook for 2 minutes.
  4. Add white beans, vegetable broth, thyme, and bay leaf. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove bay leaf. Season with salt and pepper.
  7. Serve hot.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Freeze for longer storage.
  • Add a splash of lemon juice for extra flavor.
